Tomatoes, Canning and Vacu Mason Jar Sealer

The last of the green toms ... now
just waiting for these ones to turn ...

Boiling Water Canning @ full boil!

... and all the lids sealed!!!
[tomatoes, lots of garlic, salt,
pesto and bottled lemon juice]

This is what I want so I can vacuum seal food in my cupboards and fridge and foods I've been dehydrating to keep things fresh even longer. The hose and white cylindrical device are what attach to the top of the Mason Jar with the flat top secured in place so air gets sucked out and then the screw top can be put over the flat top afterwards (so it doesn't get lost I suppose - because the seal is made with the flat top). I like the idea of being able to seal foods away in glass rather than using plastic. I can still see a use though for the plastic bags ... complicated but much used recipes (my canning books have taken a beating - I could have made a copy of the pages I needed and put them under plastic so when I was juggling goey things and trying to finger where I was in the process on the pages, it would have been useful! I'm sure there are other uses for things sealed in plastic ... but I suppose a zip lock baggie would have sufficed as protection for my canning book pages) ... hmmmm

I think this is worth it for just the Mason Jar use ... bottling everything in jars that are stackable would save space in cupboards!
